Tanjiya

 




(Tanjiya)  is a famous Moroccan dish in the city of
 Marrakech.
 It is one of the most important dishes,
 especially the way it is cooked in ashes, but it can be
 cooked in a pressure cooker.

 

          Ingredients

  • 1،500 gr of veal
  •   fresh saffron
  •   7 garlic cloves 
  • 3 big spoons cumin   
  • One pickled lemon
  • olive oil
  • water cup
  • teaspoon ghee

          How to prepare

Cut the meat into medium pieces and put

pressure cooker
Add lemon, cumin and garlic, leaving a few cloves with the peel
Add ghee and olive oil
Add saffron dissolved in a cup of water

Close the pot and leave it to appear for an hour on a low heat
The dish is served hot
